Salmon with Soya Beans



This is a Japanese-inspired dish full of clean flavours as well as soya beans which, I'm told, are very good for you! You can find them in the freezer section with the frozen peas.

This serves 2 people.

For the salmon: in an oven-proof dish add a tablespoon of ground nut oil and a few drops of sesame oil, mix together to coat the bottom of the dish. Add 2 salmon fillets, skin side down, then drizzle them with a few more drops of sesame oil and about a teaspoon of honey each. Cover with foil and bake in a preheated oven at 180c for 25 minutes.

For the Soya Beans: While the salmon is cooking fry off 3 finely chopped shallots in a little ground nut oil. Cook 250g of soya beans as specified on the packet (basically the same way as you'd cook frozen peas). Place the fried shallots in a large bowl with some chopped coriander leaves. Drain the beans and add to the coriander and shallots. In a separate bowl mix 2 tablespoons of Miso paste (available from good supermarkets as well as oriental stores), 1 tablespoon of sweet chilli paste and 2 tablespoons of hot water. Pour the miso mixture over the beans and mix well.

To serve: Place the beans in the centre of the plate and lay a salmon fillet on top.

All of the soya and miso in this dish can make it quite salty so don't be tempted to add more salt as you go along!
